Excel K18 Grip-on non-roll soft-handle hobby knife
Excel's standard metal-handle knives are very good. I enjoy using them. This knife is even better for me for 2 reasons: first, the soft handle affords a better grip with less effort, and absorbs pressure for harder cutting & shaping. That's important for arthritic hand joints! Second, I like that the blade clamp is tightened and released at the butt of the handle. I've always been a bit leery of the standard way we've all changed blades with finger flesh right next to the cutting edge. The anti-roll feature is nice if your work surface is prone to causing other knives to roll at the slightest vibration. Of course, one can exceed the ability of the anti-roll to prevent rolling, but you kinda have to work at it. In any event, I really like this knife. Don't be surprised if it becomes your standard.
